  • Preheat the oven to 180°C for 10 minutes.
  • Line the baking tray with parchment paper to ensure the cookies can be easily removed after baking.
  • You can either drop the dough onto the tray using a spoon or use a piping bag with a simple nozzle. The baking time is 10-15 minutes.

Important Tips For Making Shirini Keshmeshi

  • To prevent the cookies from drying out, store them in an airtight container, but only after they have completely cooled.
  • Avoid using a plastic bowl with the electric mixer.
  • For electric ovens, reduce the temperature by 10-15 degrees compared to gas ovens.
  • Make sure the raisins are washed and completely dry before using them.
  • If it’s your first time baking cookies and you’re not familiar with oven temperature or baking time, you can place two small raisin cookies on a piece of parchment paper and put them in the oven. This will help you get a sense of the baking time and the desired crispness of the cookies.
  • The oven temperature is crucial when baking raisin cookies. If the temperature is too low, the cookies will need to stay in the oven longer, which can cause them to dry out.
  • Raisin cookies are very soft when taken out of the oven and may appear undercooked. However, as they cool down, the interior becomes soft and the edges become crispy. If left in the oven for too long, they will dry out.
  • It is important to maintain proper spacing when placing the raisin cookie dough on the baking sheet, as the size of the cookies will increase after baking.
  • Store any leftover raisin cookies in an airtight container to keep them at room temperature for up to three days. If you place the airtight container in the refrigerator, the cookies will last for up to a week. If you make a large batch, store them in ziplock plastic bags and keep them in the freezer for up to three months.
  • Sometimes, you may have leftover cookie dough that you can place in a ziplock plastic bag and store in the freezer. This will allow you to keep the dough for up to three months. To bake the cookies, simply place the dough in the refrigerator the night before, and then follow the remaining steps of the recipe.
